Starbucks! Yep, it was Starbucks.
In fact, that was Peter Duke, Starbucks' director of Espresso Americas, who was tasked with creating a new branded seasonal drink for the fall in 2003. The developers and consumers tasted lots of pumpkin lattes as the company experimented a lot with combinations and pumpkin ratios and as a result the first drink recipe that was sold was without pumpkin in it. How crazy is that?!
In 2015 Starbucks decided to change the recipe and removed artificial colors. Ingredient and nutrition information is disclosed on their website.
Not just this drink became wildly popular thanks to Starbucks – pumpkins and pumpkin spice mixtures got its glory hour. You can easily find pumpkin spice candles, air fresheners, cough drops, sauces…etc.

2 cups milk
2 tablespoons pumpkin puree, or more to taste
1 to 3 tablespoons sugar
1 tablespoon vanilla extract
1/2 teaspoon pumpkin pie spice (cardamom, cinnamon, ginger, cloves, allspice, nutmeg)
1/2 cup strong hot coffee
Whipped cream, for serving
